Before we left town I had acquired a large tv with all the fixings from the Walkers, something they were trying to pass along to anyone willing to take it off their hands. (Thanks Walkers!)
Our house is small and we already have a tv upstairs in the family room but every since Boo's brother started living with us full time I have felt a little cramped with the tv and my computer in the same room. Not to mention the tv is right outside my bedroom door. I really didin't have a plan for where the set up would go it seemed much too big to squeeze into the front room downstairs and I don't love a tv in a front room....but we moved things around and set it up. Right in time too because Sarah and company came with a movie. The perfect activity for a kid who is well on her way to a full recovery.
We air popped giant bowls of popcorn, made homemade lemonade, and baked a batch of Greek Yogurt cookies. A great low sugar higher protein cookie recipe we adapted from a Martha Stewart recipe.
It was a bit of a madhouse with little kids running around and tween-ish girls swooning over Percy. Their was a solution to the little kids crazy, we put them in the tub where they stayed a very long time! My parents stopped over for a quick visit to see for themselves how Boo was doing & deliver some gifts to Boo a couple of new shirts and a pair of bright blue pants.
Following the movie we had a crazy dinner serving elk steak fajitas to a party of 9. As dinner was winding down a dance party & a roller skating party simultaneously broke out in the front room. Shockingly no injuries to report. A surprise appearance from Andrew, Sarah's husband and the cousin's mom (Andrew's sister) brought the house count to 11!!! The night ended in a flurry of finding shoes and jackets.Yep, just what the doctor ordered normal farm chaos restored.
All that is left is for Boo to make it through the post meet team talk tonight at gym. I hope the coaches recognize her effort to be there and help her to not feel too bad about missing out.

R & B Farm Greek Yogurt Cookies
1 cup unbleached white flour
1/4 cup whole wheat flour
1/2 tsp salt
1/4 tsp baking soda
6 TBSP butter, at room temperature
1 TBSP applesauce
1/4 cup brown sugar
1/4 white sugar
1 large egg
1 tsp vanilla extract
3 TBSP Greek yogurt
chocolate chips/nuts/raisins/spices such as cinnamon & clove
- Preheat the oven to 350.
- Whisk together dry ingredients and set aside
- Cream butter and sugar with a mixer on med-high
- Beat in egg and vanilla
- Add sour cream
- With mixer on low add dry mix slowly until just mixed.
- Dough will be sticky. Add chocolate chips, nuts, or spices if desired. Cover and freeze for 10 minutes for easier handling.
- Using a spoon scoop onto a cookie sheet and bake for 12-14 minutes.
