puffed pancake

3 eggs
3/4 cup milk
3/4 cup all-purpose flour
1 tsp vanilla
a dash of salt
2 tbsp butter
  1. Preheat oven to 450º
  2. Warm a12-inch cast-iron skillet in the oven.
  3. In a medium bowl, whisk together the eggs, milk, flour, vanilla, and salt until smooth.
  4. Carefully remove the preheated skillet from the oven and add the butter, swirling until it is melted.
  5. Pour in the batter.
  6. Bake 25 minutes or until puffed and golden.
  7. Serve with maple syrup, fruit, jam, or sugar & cinnamon.
