ginger-carrot nut bread

Ginger-Carrot Nut Bread
[kcal ~150/25 per slice] recipe makes one medium loaf
2 eggs
¾ cup brown sugar
1/3 cup apple sauce
½ milk
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp fresh grated ginger
½ tsp salt
1 cup shredded carrots 
½ chopped nuts

  1. Mix together eggs, sugar, apple sauce, milk, and vanilla.
  2. Add flour, baking powder, and salt.
  3. Fold in ginger, carrots, and nuts.
  4. Scrape sticky dough in a greases loaf pan topped with a sprinkle of brown sugar and crushed nuts
  5. Bake at 350 in a greased loaf pan for 50-60 minutes.
